Nongshim Sweet & Spicy Kimchi Shin Ramyum

★★★☆☆ · October 7, 2026

Happy Accident!

I am writing the review for Sweet & Spicy Kimchi Shin Ramyum. I bought it in a 99 Ranch Market in Washington.
Add-on: I added kimchi and two poached eggs to the ramen. I made the kimchi a few weeks ago, so the cabbage still has this freshness that I can taste. After it was added to the soup, the broth had this fresh vegetable taste. My kimchi also has a lot of garlic and ginger, so I can taste it all in the soup.

My poached eggs were still runny, so the egg yolks mixed into the soup while I was eating it. Egg yolks have a taste that I am not crazy about, but once they are in the soup, they blend with the kimchi and soup seasoning very well.

I only use a quarter of the liquid seasoning packet as a personal habit. (This is how I cut down my daily sodium consumption!)

For this ramen package, I only cooked the noodles for three minutes. I would like to emphasize that this ramen is intended to be stir-fried style, but I didn't recognize it and made it into soup-based ramen. However, it turned out pretty good, so I am going to try to stir-fry it next time.

For the noodles, I would give them 4 out of 5 stars. I personally like the noodles to be on the chewy, al dente side; I don't like soggy noodles. By cooking them for three minutes, they were chewy with a typical Korean-style noodle texture.

For the soup: (Like I mentioned earlier, this ramen is for stir-frying, but I accidentally made it soup-based. I only added a quarter of the liquid seasoning to the water with the noodles in it. I followed the instructions when cooking the noodles, so there wasn't a lot of water left in my pan when the noodles were al dente.) The soup is good, not too salty or sweet. 3 out of 5 stars.

This is a typically average Korean-sized package of ramen. Like every other Korean ramen, the noodles themselves are more on the chewy side. It is pretty average, and I would give it a passing grade! Definitely not a failing ramen (trust me… I've had bad ones in the past). Bought it while it was on sale. The liquid seasoning is more on the oily side, but it makes sense since it is designed for a stir-fried style. But as I mentioned earlier, I added it to the soup and it tasted pretty good! Overall, I like the chewiness of the noodles, cooked al dente. This ramen has no surprises and is pretty average. With the kimchi and eggs, this ramen is a perfect lunch option.

Drink: I would pair it with a cup of hot Japanese green tea. Since the ramen is vegetable-based and I added eggs, tea is a good option. I think it would be even better if I could pair it with a pork cutlet! Then I would pair the meat ramen with a glass of cold beer!
